Cut the peppers into squares. In a deep pan heat the olive oil and saute for 2 ‘- 3’ the chopped onion and the scallions which we’ve already cleaned. Add the peppers and continue sautéing for 5 ‘- 7’ until you tender little peppers. Finally, add the sausage who are cut into 2cm pieces. Pour wine and let stand for 1 ‘. Add the diced tomatoes and spices. Simmer for 30 minutes, until the sauce thickens.
