Bake the chicken until it browns … The tomatoes on our plate will cool every bite.

Ingredients for 4 people

4 thighs, whole
1/2 lemon
8 cloves garlic, lightly chopped
4 ripe tomatoes, chopped
1/2 bunch of mint, finely chopped
1/2 tsp. soup of dried thyme
70 ml of olive oil
salt, freshly ground pepper

For the spread

1 box soup of mustard
1 box soup with lemon juice
1 box of spicy paprika soup
1 box soup of honey


Grate the chicken with the lemon, salt and pepper, cover with foil and leave in the refrigerator for 15 minutes. In a bowl mix all the ingredients for the spice and rub the chicken well under the baking powder (as much as we can). Spread on a baking tray that ideally fits them and put in the garlic. Preheat the oven to 180 ° C. In a bowl mix the tomatoes, mint, thyme, olive oil and salt and pepper and pour over the chicken. Bake for 40 minutes, until golden brown. Serve with eggplant puree or tamarind and white rice.

Serve in a glass some Agioritiko wine and the meal is ready!
